I haven’t been here in a while, I know. I had a death in my family last week, which took us all by surprise. As sad as that was, it led to happy reunions with family and friends, and honestly, I didn’t want the hanging out and visiting to end. It’s been a busy, busy time, and this week will be even busier trying to catch up with tasks that were left undone. I finally threw my hands up in the air yesterday and went to the kitchen to bake, because trying to catch up a week and half of work in one morning nearly did me in.
These bars are a take-off of my Nutella bars which are a take-off of my Biscoff bars which are a take-off of lemon bars. For a long time I have wanted to try them with peanut butter, and yesterday seemed like the right time because they fit perfectly into my busy schedule. In other words, simple and easy. We are talking lemon bar-style peanut butter bars here. A shortbread crust, a moist center, and the top gets kind of crispy. They are not too sweet, and go well with a cup of coffee. I’ll be back net week with some new things.

–Like I said, the top gets a little crispy because of all the eggs. I like that.

–The crust should bake for about 20 minutes until light golden brown. Mine crust could have used a tad more baking, but I was impatient.
–These are done after about 30 minutes. They just have to be puffed and set in the middle. Don’t over bake.
- ½ cup butter, softened
- ¼ cup sugar
- 1 cup all-purpose flour
- ⅛ teaspoon salt
- 3 large eggs
- 1¼ cup sugar
- ½ cup peanut butter
- ½ cup all-purpose flour
- Preheat oven to 350 degrees. In a large bowl, combine crust ingredients on low to medium speed just until mixture is evenly mixed and moist. (It will start clumping together.) Dump into an 8 x 8 inch baking pan that has been sprayed with non-stick cooking spray. Press mixture onto bottom of pan in an even layer. (Use wet fingers if mixture sticks to skin.) Prick 6-8 times with a fork, then bake for 15-20 minutes or until golden brown around edges.
- Meanwhile, beat the ingredients for the filling on medium speed until smooth. When crust is done, spread mixture evenly over crust and bake for 25-30 minutes or just until middle is puffed and just set. Cool completely on wire rack before cutting into bars. 9 bars.
